ROMANESCO

Romanesco broccoli – also sometimes called Roman cauliflower or other variations – is an edible flower bud with a striking fractal shaped appearance. When compared to traditional cauliflower, its texture as a vegetable is far more crunchy, and its flavor is not as assertive, being delicate and nutty.
