Raw rhubarb has a crisp texture similar to celery, and more often the stalks are cooked with sugar and used in pies, desserts, or sauces. Rhubarb goes great with strawberries for a sweet & tart taste.
Be sure not to eat those leaves! They contain toxins, so it is best to cut off the leaves and discard once you begin prepping this veggie.
