A fickle vegetable, these endives need to be underground or indoors to keep the delicate leaves from turning green: the whiter the leaf, the milder the flavor! They are very sought after, hence its nickname in Belgium, “White Gold”. They can be used as a bitter highlight in salads when raw, or a subtle sweetness in entrees when cooked.
