One of the few vegetables that can be used in desserts, carrots are an easy vegetable to fit into any meal of the day. Raw, they are a crunchy snack that can also be used in salads. Cooked they become sweet tasting side dishes and colorful additions to stir-fries. Also becomes a greater source of beta carotene when cooked!
