CABBAGE GREEN

An incredibly versatile vegetable, it can be cooked in several different ways and used in countless dishes. When raw it is more peppery, good for slaw and topping tacos. When cooked it becomes sweeter and is used in stews. It is also extremely popular pickled, like in sauerkraut or kimchi. Green cabbage has a higher vitamin K content than its red counterpart.
