A chef at a fine dining restaurant in Center City Philadelphia was concerned with challenges she was having with her current supplier. She was experiencing product shortages at certain times throughout the year with what was described to her as “tight” markets. At other times, her product request was filled, but at extremely high prices. These unplanned shortages wreaked havoc with her menu and cost per plate. J. Ambrogi Food’s team implemented solutions to help her menu planning:

  • A product specialist from the purchasing department now meets with her quarterly, to review her menu plans and advise her of any known issues (such as migrations of growing regions) that might affect her menu plan.
  • During those quarterly meetings, alternate products are identified for each key menu item, in the event a substitution is required for an unknown shortage.
  • The chef is provided a weekly customized report that identifies the availability and significant cost changes associated with her key products, while also identifying the pre-determined substitute items associated with those products, to aid her in ordering.
  • Finally, the assigned sales representative meets with the chef monthly to review the effectiveness of the implemented product identification process and works with purchasing and customer service personnel to make any adjustments to ensure continued success.

An executive chef at a quick-casual restaurant in North Jersey, during a routine check-in call,expressed an interest in differentiating his concept from a couple of similarly-styled national chain concepts. He felt that one way he could do that was through the introduction of some unique menu items that the national chain would not be able to effectively introduce.  After some brainstorming with J. Ambrogi Foods’ product management team about his ideas,we designed a combination of local produce offerings and a few customized blends from our pre-cut facility, Kristy Kuts.

  • During the local growing season, 5-6 items were selected by the product management team that would be rotated every 2 months.
  • Promotional materials identifying the partnered local farms, their farm history, farming practices, and other relevant information would be produced for display in various places throughout the restaurant, including tabletop displays.
  • 2 custom salsa blends were designed for this chef by our Kristy Kuts product team.
  • 2 additional vegetable fajita mixes were designed to match specific menu items that the chef felt he could promote. Depending on availability, these mixes will include local product.

A high profile executive chef at a fine dining restaurant has complete autonomy with his menu. Every week, he sets his highly anticipated menu that drives high demand for wanted reservations. With such an emphasis on the menu, he wants a supplier that he can depend on to have weekly specialty commodities available to him without having to worry about the possibility of “86ing” a dish.The solutions implemented to address his concerns:

  • A commodities specialist from the purchasing team communicates weekly on specialty items that are available and secured for that coming week. J. Ambrogi Foods’ Sales Account Specialist communicates to the chef these items and records desired quantities and delivery dates for the week.
  • Our Sales Account Specialist invoices the products for that coming week for the chef to save him valuable time.
  • Helps the chef with menu planning/production, generates “true” offerings for his clientele and peace of mind on his weekly menu. This is an established weekly cadence with J. Ambrogi Foods building strong menu and business consistency.
