TARRAGON

An aromatic herb that is often used in French cooking with a strong flavor similar to anise. It is best used on fish, chicken, and egg dishes as well as bearnaise sauce (it is one of the main components) and being steeped in vinegar. For storage keep fresh tarragon in a loose, damp paper towel in a plastic bag, then place in your refrigerator.
