Green tomatoes aren’t a tomato variety on their own, but simply the unripe version of regular tomatoes. Since they are more firm and not as juicy as ripe tomatoes, they hold up well in many dishes. They are commonly used in chilis, salsas, stews, or simply fried and eaten as an appetizer or snack.
