ROOT LOTUS

Lotus flowers may be beautiful, but their root is a wonder all its own. Its lacey geometric interior stands out in any dish, and it has been used as an ingredient since ancient times. It tastes similar to jicama, with a crunchy sweetness and a hint of bitterness. It pairs with almost any other ingredient and does well boiled, fried, in soups, or even raw.
