Shiitake mushrooms have many uses in a vast array of cuisines. Though traditionally found sauteed in vegetarian Asian cuisines, shiitakes are making their way into more food genres. Sautéing, simmering, steaming, and frying are some popular ways to prepare and serve these fungi. They may also be sold pickled or dried as a preserved food. Shiitakes are one of the few foods with appreciable amounts of Vitamin D, due to the combined effect of UVB exposure and the mushrooms’ internal ergosterol content.
