Known as the “The King of Vegetables” (despite technically being a fruit), the eggplant is truly a worldwide food. It is used in Italian, French, Indian, Arabic, and Greek cuisine, to name a few. Because of its savory flavor and meaty texture, it tends to be the focal point of any dish it’s used in.
