Long, thin, and violet in color, the Chinese eggplant could potentially grow up to 18 inches long and 2″ in diameter. Of all the eggplants, Chinese have the sweetest flavor. They also tend to be less bitter due to fewer seeds, with a firm texture and white flesh.
