EGGPLANT ITALIAN

These small to medium sized eggplants come in at between 8 to 10 inches with a glossy, smooth outer skin. They are best suited for cooked applications, and their porous texture allows them to absorb accompanying flavors with ease. 

Storage Tip: Italian eggplants keep up to 3 days when stored in a cool, dry place. Avoid refrigerating, as cold temperatures can wind up damaging them.
