An incredibly versatile vegetable, it can be cooked in several different ways and is used in countless dishes. When raw it is more peppery, good for slaws and topping tacos. When cooked it becomes sweeter and is used in stews. It is also extremely popular pickled, like in saurkraut or kimchi. Red cabbage beats out green cabbage in iron and potassium content.
